Cloud Bread is quickly becoming the new “in” thing when it comes to a no/low carb diet. For those of us who love bread but know we must stay far away, this cloud bread offers an awesome substitution while giving us a heavenly sandwich, no matter what we choose to stick between the slices. I’ve been noodling this whole cloud bread sandwich situation and I thought to bring some ideas to you about what sorts of sandwiches we could make with it.
First, though, we need the perfect cloud bread recipe. As it happens, Tina from The Gluten-Free Foodsmith has saved us all the trouble of scouring the intertubes for the tastiest one. Just click the pic for her quick and easy cloud bread recipe.
And I love her tip about adding different spices to give the cloud bread a less bland taste. I was even considering adding some veggies in (another idea for another post another time). Now. She made pizza with her cloud bread (also called Oopsie Bread), but we are sure we can whip up a yummy batch of these and fill them up with just about whatever we want. Quick and easy…
Here are 8 Heavenly Cloud Bread Sandwich Ideas
1 – Turkey and cheese. While this might be the most boring out of all our ideas, don’t knock the turkey/cheese combo until you’ve tried it. Get some tasty deli turkey (all natural is our choice) and a slice of cheese (your choice, we prefer cheddar or provolone) and slap them between your cloud bread slices. Add lettuce, tomato, and a little mustard if you like. So good.
2 – Tomatoes, mozzarella, and basil. Make it a caprese sandwich with just a taste of balsamic vinaigrette for added flavor. Go on and get creative by including some crumbled bacon or a thin slice of chicken, just to kick it up a notch. Try toasting your cloud bread for this yummy idea, to give you a bit of “baguette” experience along the way.
3 – Steak and cheese. Go the Philly route if you are hungry for a good cheese steak sandwich. Add roasted veggies (peppers, onions, mushrooms) for even more tastiness. And don’t be afraid to change the shape and size of your cloud bread while baking it, first. You may fashion it into a hoagie style flat, for added “Philly Cheesesteak” flair.
4 – Tuna. Oh my goodness, there are so many ways to have tuna with cloud bread. Make a tuna salad to fill that round. Add lettuce and tomato for fun. Or make it a melt by adding a tasty slice of cheese and toasting your whole sandwich before sitting down to enjoy it.
5 – Cream cheese and salmon. A very tasty treat for breakfast, lunch, or snack – cream cheese your cloud bread and lay a yummy bit of salmon on top. Add some capers if you like, whatever other spices, too, and enjoy.
6 – Chicken salad. Another crowd pleasing sandwich around here. Tasty chicken salad between two heavenly slices of cloud bread. Grab your lettuce and tomato if desired, and get your chicken salad sandwich on.

8 – Cream cheese and veggies. This one is so stunningly simple yet so darn good.
